for instance that our beef is matured for a minimum of 4 weeks
to mature the flavour and tenderness of the breed.

Beef
-We are currently offering the Dexter, Belted Galloway, and Traditional
Hereford.
|
|
Dexter
- Originally from Ireland, where it thrived on rich or poor pasture
alike, is the smallest breed of cattle in Europe. Produces sweet
tasting, succulent and well marbled, beef.
|
|
Belted
Galloway
- This very old Scottish breed, with a distinctive white belt
around the middle of its body, produces plenty of well marbled,
excellent quality beef.

|
Traditional
Hereford
- Originating from our own County, influential around the world,
the original is famed for its adaptability to rich and poor pasture
alike - and the quality of the beef is superb.

Lamb
- We are offering the Balwen, Shetland, and Wiltshire Horn. -
Britain's rare breeds of Lamb are kept on grass and matured at
their own pace becoming something to truly savour.

- A Welsh Mountain breed, quite small in size, lean and tender
with great flavour.
|
|
Shetland
- The link between Primitive and more conventional breeds, producing
a lean and quite densely textured meat.

Wiltshire
Horn - Originating
from its namesake County, lean, tender, and beautifully tasty.

- Gloucester Old Spot, Berkshire, Tamworth, and Saddleback

Old Spot
- An old breed from the vale of the River Severn, traditionally
kept in orchards. The meat is well marbled and delicious - as
pork or bacon - this is how traditional meat should be.

Berkshire
- A specialist pork originating from around Wantage - it is renowned
for its early maturing, with a wonderfully light and delicate
flavour.

|
Tamworth
- This ginger coloured pig originated in the Midlands, renowned
for its quality bacon, its pork too provides excellent full flavour
and high eating qualities.

|
British
Saddleback
- A black pig with a white saddle around the shoulders, from the
Dorset / Hampshire borders and Essex, excellent for pork or bacon,
the meat is top quality.
